Topic: Meat Science II

Why Process Meat?

Fresh meat is like a ticking clock; from the moment an animal is slaughtered, natural enzymes and tiny germs (bacteria) start to break it down. If we don’t do something, the meat will spoil in a day or two.

Processing and Preservation are our ways of:

  1. Saving for Later: Keeping meat safe to eat weeks or months after slaughter.
  2. Adding Flavor: Making things like suya, kilishi, or sausages.
  3. Making Money: A pack of spiced, dried meat often sells for more than a raw chunk of beef.

 

Common Methods of Meat Preservation

To preserve meat, we have to make it an “unfriendly” place for bacteria to live. We do this by removing water, changing the temperature, or adding natural preservatives.

  1. Low Temperature (Cold)
  • Chilling: Keeping meat in a fridge at 0°C to 4°C. This slows down bacteria.
  • Freezing: Keeping meat at -18°C or below. This stops bacteria completely by turning the water in the meat into ice.
  1. Thermal (Heat)
  • Cooking/Canning: Heating meat to high temperatures inside a sealed jar or can to kill all germs.
  1. Dehydration (Drying)

Bacteria need water to grow. If we remove the water, they can’t survive.

  • Sun Drying: The traditional way to make meat strips last.
  • Smoking: Using heat and smoke from wood. The smoke creates a “skin” on the meat that keeps germs out and adds a delicious flavor.
  1. Curing (Salting)

Adding salt draws out moisture and kills bacteria. Often, we add spices or “nitrates” to keep the meat looking pink and fresh.

 

Popular Meat Products in Nigeria

We are experts at meat processing! Here are a few examples:

  1. Kilishi: This is the Nigerian version of “Beef Jerky.” Meat is sliced very thin, dipped in a spicy peanut paste (Labu), and sun-dried then lightly roasted.
  2. Suya: Meat is spiced and grilled over an open fire. The heat and the spices (especially ginger and pepper) help preserve it for a short time.
  3. Sausages: Meat is ground up, mixed with fat and spices, and stuffed into a “casing” (usually made from cleaned intestines).

 

Meat Packaging (The Protective Shield)

Packaging isn’t just about looking pretty in the shop; it is the final defense against dirt, flies, and air.

  • Vacuum Packaging: All the air is sucked out of a plastic bag before sealing. Without oxygen, most “spoiler” bacteria cannot grow.
  • Plastic Wraps: Used for short-term sales in supermarkets. It keeps dust off but doesn’t stop spoilage for long.
  • Canning: The most secure packaging. It protects the meat from air, light, and insects for years.

 

Safety and Quality Check

When processing meat, you must watch out for “The Danger Zone.”

The Danger Zone: This is between 5°C and 60°C. Bacteria grow fastest at these temperatures (which is exactly the temperature of a normal room in Nigeria). Meat should never stay in this zone for more than 2 hours!

Signs of Spoiled Meat:

  • Smell: A sour or “rotten egg” odor.
  • Touch: If the meat feels slimy or sticky.
  • Color: If beef turns green or grey (though a little browning is sometimes just air exposure).

  1. The Suya Test: Why do Suya sellers wrap their meat in old newspapers or aluminum foil? Which one is more hygienic and why?
  2. Observation: Visit a supermarket and look at the meat section. Compare a tray of fresh beef to a vacuum-sealed pack of sausages. Which one has a longer “Expiry Date”?

Project Idea: If you wanted to start a business selling “Gourmet Kilishi,” what are three things you could do to make your packaging look more professional than the ones sold on the street?
