Topic: Dairy Technology I

What is “Dairy Technology”?

When we talk about Dairy Technology, we are talking about the science of “Life’s First Food”—milk. It covers everything from the moment the milk leaves the cow’s udder to the moment it reaches the customer’s breakfast table.

In Nigeria, dairy is a massive opportunity. Most of the milk we drink is imported as powder, but our local cows (like the Bunaji or White Fulani) have the potential to provide fresh, healthy milk if we manage them with the right technology.

Milk Production (The “Secret” to High Yield)

Milk isn’t just “produced”; it is manufactured inside the cow’s body using the nutrients she eats. To get plenty of milk, a farmer must focus on:

  • The “Mother” (Breed): Some cows are naturally better at making milk. While our local breeds are tough, crossing them with breeds like the Holstein-Friesian can significantly increase how many liters a cow gives daily.
  • Nutrition: A cow cannot make milk out of thin air. She needs high-quality pasture, plenty of clean water, and “concentrates” (feed rich in energy and protein).
  • Comfort: A stressed or hot cow will hold back her milk. Shade, ventilation, and gentle handling are essential.

 

The Golden Rules of Hygiene (Clean Milk Production)

Milk is the perfect food—not just for humans, but for bacteria too! Because milk is warm and full of nutrients, germs love to grow in it. Hygiene is not an option; it is a necessity.

  1. The Milker (The Person)
  • The person milking must be healthy (no coughs or skin infections).
  • Hands must be washed with soap and nails kept short.
  • No smoking or eating while milking to avoid contamination.
  1. The Animal
  • The udder and teats must be washed with warm, clean water and dried with a clean cloth before milking.
  • The “first squirt” of milk from each teat should be discarded into a separate cup (this milk often contains the most bacteria).
  1. The Equipment
  • Never use rusty or plastic buckets that have scratches. Scratches hide bacteria that soap can’t reach.
  • Stainless steel or seamless aluminum containers are the best because they are easy to sterilize.

Proper Milk Handling (From Udder to Jar)

Once the milk is out, the “clock” starts ticking. In our Nigerian heat, fresh milk can turn sour in just 2 to 3 hours if left alone.

  1. Straining: Immediately pass the milk through a clean, fine cloth or a milk filter to remove any hair, dust, or dirt that might have fallen in.
  2. Cooling: This is the most critical step. Bacteria “sleep” when it’s cold. If you have a refrigerator, get the milk down to 4°C as fast as possible. If you don’t have a fridge, place the milk container in a bowl of cold, flowing water.
  3. Storage: Keep milk in a cool, dark place away from strong-smelling foods like onions or kerosene. Milk acts like a sponge and will “absorb” those smells!

 

Common Milk Contaminants (The “Spoylers”)

  • Physical: Hair, dung, flies, or dust.
  • Chemical: Traces of soap from poor rinsing, or antibiotics if the cow was recently treated for sickness.
  • Biological: Bacteria like E. coli or Salmonella which can cause “Milk Fever” or food poisoning in humans.

  3. Observation: Visit a local “Fura da Nono” seller. Observe how they handle the milk. Based on today’s lesson, what is one thing they are doing well, and one thing they could improve?
