Topic: Meat Science I

From “Animal” to “Meat”

When we talk about Meat Science, we are looking at the professional way an animal is converted into food. This process must be done carefully. If it is done poorly, the meat will be tough, it will spoil quickly, and it could even make people sick.

The goal of a good slaughterhouse (Abattoir) is to produce a Carcass—which is the body of the animal after the head, feet, and internal organs have been removed—in the cleanest way possible.

 

Pre-Slaughter Handling (The “Rest” Period)

You cannot just take an animal straight from a long, stressful truck ride to the slaughter floor.

  • The 24-Hour Rest: Animals should be rested for 12 to 24 hours before slaughter. During this time, they should have plenty of clean water but no food.
  • Why no food? It makes the stomach easier to remove without accidentally cutting it and spilling waste onto the meat.
  • Why the rest? A stressed animal has “tired” muscles. This leads to meat that is dark, dry, and goes bad quickly. A relaxed animal produces bright, juicy meat.

 

The Slaughtering Process (Step-by-Step)

In a professional setting, we follow these specific steps to ensure the animal does not suffer and the meat stays clean:

  1. Stunning (Optional/Modern): The animal is made unconscious so it doesn’t feel pain.
  2. Bleeding (Exsanguination): A very sharp knife is used to cut the jugular veins in the neck. It is vital to get as much blood out as possible. Blood spoils very fast; if it stays in the meat, the meat will rot in hours.
  3. Skinning or Scalding: * For cattle, sheep, and goats, the skin (hide) is carefully peeled off.
    1. For pigs, they are usually dipped in hot water (scalding) to remove the hair while keeping the skin on.
  4. Evisceration (The “Clean-Out”): This is the most delicate part. The stomach, intestines, liver, and lungs are removed. The butcher must be very careful not to puncture the intestines, as the waste inside contains bacteria that will ruin the meat.

 

Carcass Dressing (The “Finishing” Touches)

Once the “insides” are out, we are left with the Carcass. Dressing is the process of preparing this carcass for the butcher’s shop.

  • Trimming: Any excess fat, bruised meat, or dirty bits are cut away.
  • Splitting: Large carcasses (like cows) are usually split down the middle of the backbone into two “sides” to make them easier to handle and cool.
  • Washing: The carcass is washed down with clean, pressurized water to remove any remaining blood or bone dust.
  • Weighing: The “Dressed Weight” is recorded. This tells the farmer exactly how much sellable meat they got compared to the live weight of the animal.

 

The “Cold Chain” (Preservation)

As soon as the dressing is finished, the carcass should be moved to a Chiller or a very cool room.

  • Fresh meat is warm. If it stays warm, bacteria will multiply.
  • Cooling the meat down to about 1°C to 4°C “sets” the meat, making it easier to cut into steaks or chunks later and keeping it fresh for days.

  1. The “Lairage” Observation: If you visit a local slaughter slab, look at the animals waiting. Are they resting in the shade with water, or are they standing in the hot sun? How will this affect the meat?
  2. Health Check: Why does a Veterinary Doctor need to inspect the animal before it is killed and the organs after it is killed?

Brainstorm: If you are in a village with no electricity/chiller, what is the best time of day to slaughter an animal to ensure the meat stays as fresh as possible for the buyers?
