Passage: how to make moi-moi

Every Saturday, Mrs Bello makes moi-moi for her family in Ilorin. Her daughter, Amina, helps her. This is how they do it.

First, they pour two cups of brown beans into a bowl and add water. They leave the beans to soak for ten minutes so that the skins come off easily. Then they rub the beans between their hands and wash the skins away.

Next, they put the clean beans into a blender with fresh pepper and one onion. They add a little water and blend the mixture until it is smooth and thick.

After that, they pour the paste into a bowl. They add vegetable oil, salt and a seasoning cube and stir well. Mrs Bello likes to add pieces of boiled egg.

Then they spoon the paste into small containers. They place the containers in a pot with a little water at the bottom, cover the pot and cook the moi-moi for about one hour.

Finally, they take the moi-moi out and let it cool a little. The family eats it with pap or rice.
